Wet brined for three days, dry brined for a day and a half, then smoked until the skin is crispy and the meat is juicy. Comes with a quart of gravy made from the turkey's own drippings.

- How we charge
- Choose your size, small, medium or large, and place a deposit for the largest bird in that range. We weigh your turkey the day we buy it, before it goes into the brine, and refund the difference at $15 a pound on that weight, so the deposit is the most you will ever pay. It goes home chilled, ready to warm through on Thanksgiving.
